Some foods seem to go together naturally. Ham and cabbage for example. beans and bacon too. These are natural pairs, which are full meals.
Then there are foods that work so well a recipe that can be difficult to separate. Tomato and Basil are perfect examples, such as fish and dill. However, everything seems to go with chicken.
Chicken and Ginger are especially toothsome. Not that dry, powdered material that goes into the bread, but fresh ginger: crisp, spicy and slightly hot, with a shade of lemon.
Ginger root is sold in most supermarkets. You want to find a piece with a fine, smooth skin. Is the ginger, the heaviest of the skin, and becomes more woody. Look for one that doesn't have a lot of "knuckles," as it becomes difficult to grate.
Ginger Chicken bites
You need to know:

Cut the chicken into bite-sized pieces. Place in a large bowl with a lid.
Peel and grate the ginger. Finely chop or press the garlic cloves. Place the garlic, ginger and the rest of the ingredients on the chicken and the chicken a few laps so that it is well covered with the marinade. Cover and refrigerate overnight.
This next step can be made on the previous day, or one hour before serving, depending on whether you want to serve them hot or cold. They are also good anyway.
Beat the eggs well with water. Get the chicken from the marinade, reserving liquid. Plunge into the egg wash and then coat with bread crumbs. Do not discard the unused eggs.
Place that bites the chicken on a baking sheet sprayed with cooking spray.
Bake for 15 to 20 minutes in a 350 oven.
Dipping sauce:
Beat the eggs remaining marinade and together. In a medium saucepan over low heat, bring to the boil, stirring constantly. Be careful not to let it burn or to allow eggs to cook too fast or you'll have a mess of ginger flavored scrambled eggs. Correct the seasoning if necessary with a little soy sauce.
To serve, place six or eight chicken bites on a plate with a small cup of sauce, or put them in a pile on a plate and let guests dig. If you prefer, you can also serve you with honey mustard or something.
