Almost all cultures eat eggs, unless there are religious or dietary restrictions. The eggs are called, at least for advertisers, "nature's most nearly perfect food". And let's face it. They are darn good. But what you do with them not FRY or struggling?
Huevos Rancheros are always, Ranch style eggs. Traditionally they are made with a toasted tortilla style fried, covered with a fried egg, chili and salsa. Loads of fat, calories and everything else that we are trying to avoid. So, if we try to make them more sensible?
That try that. For each service, you will need:
a flour tortilla or tablespoons fresh corn tortillaone eggtwo of salsatwo tablespoons of black beanstwo tablespoons of breakfast sausagesaltpeppersour creamWarm the tortillas and withdrawn, covered in a towel.

Ultra easy, can be made on the night before and is kept in the refrigerator until you are ready to pop it in the microwave, and takes less than 10 minutes to cook.
A can of 12 to 16 oz. of queso or nacho ounces of eggs8 of sauce8 cheese cooked, crumbled chorizo or crumbled baconIn a microwave-safe bowl large (glass is best, as the longer baking and cheese hot can melt or deform less plastic) place the queso. Stir until smooth. One or two at the time, beat the eggs until they are added. Stir in beef, reserving a few tablespoons to sprinkle on top.
Microwave on high for 2 minutes. When the timer fires, use a spoon and pull the boiled egg on the side of the Centre. Cook for more than two minutes and pull the cooked bits. Repeat until the medium is just a little custardy. It is set around a minute microwave.
Served with warm flour tortillas and a small mango salsa.
