Cooking with green tea – is another great way to get the health benefits that this old drink has to offer. Try this recipe that combines beautifully green tea, vegetables and whole grains in a dish tasty and healthy.
Ingredients for two portions of main dish or four servings of dish
1 tablespoon of coconut oil
1 small sweet potato, chopped
1/2 an onion chopped medium well
1 rib celery, thinly sliced
2 cloves garlic, minced
1 tbsp yellow curry powder
1/8 teaspoon cayenne pepper
1/2 cup whole wheat couscous
1/4 cup golden raisins
1/2 cup chicken broth, hot (homemade is best)
1/2 cup prepared, hot green tea (tea suppliers follow your instructions of beer)
1/4 cup pistachios, chopped
1/4 cup chopped Chinese chives
Directions
Heat coconut oil in a skillet large heavy bottomed on medium heat. Add the shredded sweet potato and onion. Cook until softened, about 5 minutes. Add the garlic, yellow curry powder and cayenne pepper. Continue to cook for one minute.
Transfer to a large bowl and add the heat proof golden raisins, whole wheat couscous, chicken broth and green tea. Stir until well combined and then cover tightly with plastic wrap. Let sit at room temperature for 10 minutes.
Discover and then gently fluff couscous with a fork. Transfer to serving plates. Top with chopped pistachios and scallion.
Tips and suggestions
Make vegan couscous using the broth instead of chicken broth.
For a heartier fare dish, add cooked chicken, shrimp, beef or tofu.
