Directions

Heat coconut oil in a heavy bottomed pan on medium heat. Use your food processor, equipped with a multi-purpose blade for roughly chop the onion. Add to saucepan and cook until soft, about five minutes. Quarter the carrot and potato, and use the food processor to roughly chop them. Add the carrots, potatoes, chicken, thyme and Rosemary to the pot. Bring to a boil and then simmer until soft (about 30 minutes).

Let the soup cool slightly and then transfer to the food processor. Process until well blended. Return to cooking pot. Add the coconut milk and ginger. Cook until heated through.

This is an easy task for any food processor with one caveat: dimensions of matter. You can only fill in a food processor about halfway with liquid. A small model will be able to do the job, but you may need to pur and it in several lots. Or you could use the food processor to chop the vegetables and then switch to a blender to pur eing.
